Technical Notes

Grenache (50%) Syrah (25%) and Mourvèdre (24%) were sourced from our Rhône plantings. A tiny quantity of Muscat of Alexandria (roughly 1%) was co-fermented with the Grenache. All varietals were harvested upon reaching phenolic ripeness and cropped at 1.8 tonnes to the acre. Grenache-Muscat, Syrah and Mourvèdre were fermented separately in open top fermenters using 30% indigenous yeasts. More than half of the wine was left to soak on skins for a further 16 days post fermentation. The wine was aged in older French oak barriques for 22 months prior to bottling without fining or filtration.
