Pinot Noir One pursues an elegant style. Minimal intervention winemaking produces a wine of poise and ﬁnesse. The purest representation of Pimpernel terroir.
Aroma: From ﬁrst pour the nose is exceptionally expressive with bold red and black bramble fruits and lifted perfume. Opulent strawberries and cream evolve to succulent raspberry and cherry with just a touch of umami complexity oﬀsetting the ethereal nose.
Palate: The palate is bold, rounded and fruit-laden with ﬂeshy morello cherry and fresh raspberry predominating. A subtle ﬁne char from the ﬁne grain oak beautifully frames the succulent fruit, which underpinned by vibrant acidity, produces a reﬁned and elegantly structured ﬁnish.
Fruit for Pinot Noir One comes from our main north facing slope. The 114, 115 and 777 predominate. Fruit was handpicked at optimal ripeness with a low crop level of 1.5 tonne per acre. Bunches were destemmed prior to fermentation in open topped vats. The vast majority of ferments were whole-berry, allowing carbonic maceration to highlight bright fruit expression whilst imbuing rich, rounded textural feel. After fermentation the wine was transferred to barrel without extended maceration. Very tight grained French barriques were carefully selected for reﬁned char and subtlety (30% new). After 12 months in the cellar, the wine was bottled without ﬁning or ﬁltration.
