Pinot Noir Two is the antithesis of Pinot Noir One, with emphasis on secondary character expression. Ripe stalks, post fermentation maceration up to 21 days, and carefully chosen charry French barriques, create a wine of structure, power and savoury intensity.

Tasting Notes

Colour: Ruby

Aroma: On first opening the nose is extremely dark and closed, again exactly what we would hope for with this style in its youth. With gentle glass decanting the wine opens ever so slightly to reveal cacao, malt and toasted rye bread.

Palate: The palate is as powerfully concentrated as the nose suggests with layers of rich dark chocolate, cherry cola, orange oil and rhubarb. The macerated fruit, stalks and charry oak flood the palate with spice and savoury richness that lingers indefinity. Broad coffee like tannins meld seamlessly with elegant acidity to give the wine a long structured finish.

Technical Notes

Pinot Noir Two is made with fruit sourced from our main north facing block, with 114, 115 and Mv6 clones predominating. The fruit was fully ripe with small bunches and low cropping around 1.5 tonnes per acre. Fermentation was in open top stainless steel fermenters with retention of ripe stalk in around 40% vats. Other vats underwent extended maceration for structure and palate weight. The wine was matured in a careful selection of medium char French oak barriques (30% new) prior to bottling at 12 months without fining or filtration.
