We have always been inspired by the great white wines of the Côte de Beaune and create a style distinctly different to the current Australian trend of early picked, lean and minimally oaked Chardonnay. Dry land farming produces excellent natural acidity allowing us the luxury of natural malolactic conversion. We aim to create a Chardonnay that is fruit-expressive, structurally complex and textural.

Tasting Notes

Colour: Bright green-gold

Aroma: The immediate impression is of lime, pear, oatmeal and cultured butter, evolving to apricot custard danish.

Palate: The wine is soft, creamy and texturally complex. Succulent nectarine, white peach, pear and lime characters integrate with more savoury notes and full creamy palate. The intense fruit and malolactic characters are underpinned by bright chalky acidity, producing a long and well defined finish.

Technical Notes

Our Chardonnay vines are planted at the cooler eastern end of the vineyard and comprise of unclassified cuttings from Yarra Yering and P-58 clone. Dry grown fruit was handpicked and cropped at less than 2 tonnes per acre. The fruit was lightly crushed and basket pressed prior to cooling, settling and fermentation with wild (30%) and cultured yeasts. Free run juice was transferred to the cellar for barrel fermentation (80%). Pressed juice completed fermentation in tank before being transferred to the cellar. Maturation included prolonged lees contact with minimal stirring in French oak barrels (40% new) for 14 months prior to bottling.
