Chenin Blanc 2018

In mid-2017 we ventured to the Loire Valley and met with some of the great producers of Chenin Blanc. They shared with us their philosophy and experience working with this incredible varietal. Inspired by our time there, we have crafted a new style of Chenin. Through the use of partial wild fermentation, a lot of it in mature French oak and 10 months aging on yeast lees, we have built structure, richness and complexity on top of the pure Chenin characters of apple strudel, limestone, and searing acidity.

Tasting Notes

Colour: Pale gold

Aroma: The predominant aromatics are apple, apple skin, pear, quince and sweet spice reminiscent of apple strudel. These characters overlay subtle white flower and spring grass.

Palate: The palate is fruit driven with creamy texture and bright acidity. Apples and pears, vanilla, sweet spice and pastry are paired with fresh persistent limestone-esque acidity giving way to a clean and refreshing finish.

Closure: Diam

Technical Notes

Our Chenin Blanc vines are north facing, planted on an acre block at the lower west end of the property. The vines were cane pruned and yielded 1.5 tonnes to the acre. Once ripe the fruit was hand harvested, crushed and basket pressed off skins where the juice was settled, cooled and then transferred to mature French barriques and 500 litre puncheons for fermentation. The wine was matured in oak for 10 months on yeast lees for added richness and complexity.
