In mid-2017 we ventured to the Loire Valley and met with some of the great producers of Chenin Blanc. They shared with us their philosophy and experience working with this incredible varietal. Inspired by our time there, we have crafted a new style of Chenin. Through the use of partial wild fermentation, a lot of it in mature French oak and 10 months aging on yeast lees, we have built structure, richness and complexity on top of the pure Chenin characters of apple strudel, limestone, and searing acidity.
