We have always been inspired by the great white wines of the Côte de Beaune and create a style distinctly different to the current Australian trend of early picked, lean and minimally oaked Chardonnay. Dry land farming produces excellent natural acidity allowing us the luxury of natural malolactic conversion. We aim to create a Chardonnay that is fruit-expressive, structurally complex and textural.

Tasting Notes

Colour: Bright green-gold

Aroma: The nose is immediately complex and alluring. Profoundly fragrant lime zest leads to juicy mango and mandarin. With time the aroma evolves to show flint, white chocolate, macadamia, vanilla and fresh pear.

Palate: The depth and complexity hinted at by the aroma are overtly exhibited through the palate. The acid is electric. The primary fruit characters are of lime, kiwi fruit and pear which flow seamlessly into vanilla with a creamy palate feel. The fruit is framed beautifully by fine grained French oak adding soft char.

Technical Notes

Our Chardonnay vines are planted at the cooler eastern end of the vineyard and comprise of unclassified cuttings from Yarra Yering and P-58 clone. Dry grown fruit was handpicked and cropped extremely low at 1.3 tonnes to the acre. The fruit was split and basket pressed prior to cooling, settling and fermentation with wild (30%) and cultured yeasts. Free run juice was transferred to the cellar for barrel fermentation (80%). Pressed juice completed fermentation in tank before being transferred to the cellar. Maturation included prolonged lees contact with minimal stirring in French oak barrels (40% new) for 14 months prior to bottling.
