Technical Notes

Our Marsanne was planted in a single block on a north-west facing slope; low-yielding vines, they produce 1.0 tonne per acre on average. Ripe, hand-harvested bunches were lightly crushed and allowed brief skin and stalk, then gently basket-pressed to tank and inoculated. Juice was gravity-fed to barrel to complete fermentation. Matured on lees in old French oak for 20 months with light lees stirring and spontaneous malolactic conversion for added richness and complexity. Bottled without fining or filtration (DIAM closure). Production: 800 bottles.
