Pimpernel is renowned for creating distinctive and contrasting Pinot Noir styles, and has long been interested in exploring different sub-regional terroirs in the Yarra Valley. This inaugural release is made with fruit sourced from a single vineyard site in Dixons Creek, near the Toolangi State Forest. Toolangi was originally known as “Mount Rose” by 19th Century European settlers. The elegant wine produced from this site has fine fruit expression and refreshing bright acidity, and obvious structural differences to compare with Pinot Noirs produced from our Coldstream estate-grown fruit. A delicious taste of new things to come.

Tasting Notes

Colour: Bright, medium garnet

Bouquet: The nose is dominated by black cherry, floral notes, forest fruits, and rhubarb, with prominent spice, Sichuan pepper, wild mushrooms, walnut shell, and savoury dried herbs and green tea notes, to complement the fruit characters.

Palate: The palate is at one with the nose, juxtaposing elegant red and dark fruits with soft forest-floor characters, amidst a core of persistent acidity and fine, savoury tannins. A refined Pinot Noir from a cool Yarra Valley site, offering a contrasting style to our estate-grown wine.

Technical Notes

Fruit was sourced from a 19-year-old single-vineyard site with an established legacy for producing premium Pinot Noir. The low-cropped and hand-picked MV6 clone was hand-sorted and fully destemmed, with whole berries transferred to small, open-top stainless-steel vats for fermentation with an inoculated yeast culture. A small portion of stalks was added to one vat to build complexity and structure. Time on skins was up to 25 days, with one third of vats undergoing post-fermentation maceration to enhance tannin structure and flavour. Basket-pressed off skins, the wine was gravity- fed to French oak barriques (30% new) in our underground cellar for spontaneous malolactic conversion and maturation. After 12 months in oak, the wine was racked off lees and bottled without fining or filtration.
