Technical Notes

Our Viognier vines are planted in the Rhône block with rows facing north and sloping slightly to the northwest. The planting comprises 1.6 acres of Château-Grillet clone. These ultra-low yielding vines cropped at 1.9 tonne per acre. Bunches were de-stemmed, crushed and pressed with brief skin contact providing essential structural and aromatic characters. The juice was transferred to stainless steel and inoculated with cultured yeast. Following fermentation, the wine was matured for 14 months in one- and two-year-old French barriques.
