Absolutely perfect ripening conditions allowed us to slowly, and very selectively, harvest our close-grown Syrah/Shiraz block over the course of almost 4 weeks. The Whole Bunch Shiraz 2017 represents the final harvest of the block and, as the name suggests, was fermented with whole bunches on stalks for ultimate power and intensity. Incredible now with decanting, or better still over the next 20 years.

Tasting Notes
Colour: Dark Purple
Aroma: The nose immediately erupts with an incredible dark intensity. Tree bark, stalk spice, cedar and dark chocolate biscotti almost overwhelm the senses.
Palate: The palate is as dark and rich as the nose insists: bitumen, espresso, and raw earth, juxtaposed by the faintest hint of a fresh plump raspberry concealed beneath the layers of black. The length is seemingly infinite and dark, underpinned by an elusive but enduring acidity.

Technical Notes
The grapes were sourced from close planted vines on our west sloping block which cropped at 2 tonnes to the acre. Each ferment vat was half filled with whole-bunches before being topped with destemmed whole-berries. The vats were then covered and slowly commenced carbonic maceration and wild fermentation. Gentle hand plunging and in later stages foot stomping was employed to gradually release all of the grape sugars and draw out the wines contact with the grape matter. Fermentation took place over 3 weeks. The wine was then gravity fed to the cellar for maturation in charry French barriques 35% new. The wine was matured for 20 months before bottled without fining or filtration.
