Ideal ripening conditions allowed us to carefully and selectively harvest our close-planted Shiraz block over the course of several weeks. Our second release of Whole Bunch Shiraz represents the final harvest of the block and, as the name suggests, was fermented with a significant portion of whole bunches for ultimate power and intensity. Incredible now with decanting, or cellar for 10 or more years to savour something utterly divine.

Tasting Notes

Colour: Dark purple

Aroma: The nose is initially restrained and brooding, requiring patience for this young wine. Later, the wine erupts with an incredible intensity of sweet and savoury aromas: dark bramble fruits, blood plums, black cherry, violets, liquorice, purple carrot, tobacco, stalk spice, cedar and dark chocolate excite the senses.

Palate: The medium-weight palate is as rich as the nose alludes, combining waves of intense sweet and savoury flavours to impress the senses. The length – seemingly infinite – is underpinned by precise acidity and mouth-filling, powdery tannins gently extracted from foot-macerated skins. This luscious and vibrant young wine is a glorious celebration of sophisticated Shiraz.

Technical Notes

The grapes were sourced from close-planted Shiraz vines on our west sloping block which cropped at 1.5 tonnes to the acre. Each ferment vat was half filled with whole-bunches before being covered with destemmed whole-berries. Vats were then covered to slowly commence carbonic maceration and wild fermentation over three weeks. Gentle hand plunging and foot stomping in later stages of the ferment were used to gradually release nutrients and phenolics into the must. After basket-pressing, the wine was gravity-fed to the cellar for maturation in charry French oak puncheons and barriques (1-3-year-old). The wine was matured on lees for 18 months; twice-racked, and then bottled without fining or filtration (DIAM closure).
